There does seem to be a trend of people paying for a farm to table experience and you might be able to capitalize on it. I'm not certain if Holstein is the beef of choice or not. Have you searched some of the "foodie" type websites that promote this? There are a lot of beginning chefs out there looking to partner with farmers like yourself, you just need to know how to connect with them. I think the internet is the answer. What about IL farm extension services?
There is a local farmer whose son is an accomplished chef. He is buying Angus from his family to use in his upscale restaurant. As Jim pointed out restuarants using only certain cuts I think the right chef would be able to utilize the entire animal. Good luck! Keep us informed.
