The problem with a small cattle operation trying to work with a restaurant or store is that you seldom have enough quantity of any one cut, other than ground beef, in order to supply their needs on a regular basis. Another thing about selling to stores or restaurants is that they want to buy whatever you are selling at an absolute rock bottom price since they live on the mark-up margin.
