I would not recommend it as germ drops and I'm not certain that production didn't get planted. Planted later, sure. But about 25-30% of seed sold in one year is carried over from the previous year that passed germ testing.
I would not save soybeans. Corn? I wouldn't recommend it the risks are relatively small if you can keep it cool and rodent free.
