Go ahead and go with the "permanent plan". Personally I would go with alfalfa, orchard grass, and annual ryegrass. The annual ryegrass comes up in like 3 days and will be a nurse crop and provide grazing while alfalfa and orchard establishes. The annual ryegrass will winterkill the be first winter.
