I’ve had them stall out at 180-195 also, gonna have to look at my notes but I think I remedied this by going to 325° after I wrapped it up, I know that I did that at least a couple times, but you really gotta watch the temp, because all of a sudden it’ll be at 215°.

Alotta of times if it’s at a good solid 195-197 i’ll Pull the brisket off and leave it sealed up for a half hour resting, it seems to work for me.
