Was there a consensus on here as to why chicken meat is so tough nowadays?

Not all chicken is bad, went to Appleby's today, had a grilled chicken breast, with 2 sides it was very good.

Sometimes it is about preparation and knowledge of cooking.  

I can tell that is much of this issue on here.

Applebee's is next door to my wife's office, so we do lunch there fairly regularly, & have gotten to know the manager. She came by the table one day & asked how everything was. My wife, brutally honest as she is, told her the chicken was a little rubbery...Manager said I know, that's a problem, & we just have a hard time getting good tender chicken any more...so yeah, it's not always the preparation...


Covered her A$$, all in the preparation, you can tenderize it, overcooking and temperature change can also turn chicken rubbery.
