Like you said, everyone will have their own preference.
I prefer 650-750# and will occasionally go 600 on the low end and 800 on the top end. Usually have much less issues by the time they are to this weight versus lighter calves. When you start getting up into that 8-9wt category your window for profit can narrow in a hurry, especially if they have any problems adjusting to the move.
