If contracts don’t stay lucrative we’ll do something else in that shed. We built it so if we ever want make it into a machine she we can with minimal modifications.
According to my marketing guy that I work with he said the packers love holsteins. They are selling it as “beef” to the consumer. Just because it’s jersey, Holstein, or Hereford they don’t change the price on the consumer end with the exception of black hided cattle.
So they get to buy this “everything else” at a big discount but still maintain full price on the selling end. I’m assuming here but I’d guess there isn’t many places the do holsteins because they aren’t setup for the longer carcasses or they just don’t have the supply in those areas.
So I think they want to keep us in business, but as you mentioned the more they can stuff in their pockets they will.
