Ventilation has been mentioned, and the sun reaching the back of my 40 foot deep building in the winter is a big deal to me. 16 foot side walls.
Another consideration for me was the potential for re-purposing the building if I were cured of the cattle feeding disease.
I often see older open front cattle sheds no longer in use that are too low at the eves to get much machinery in.
In my case the additional cost to go taller was not much, and if i remember correctly the carpenter said if I went with less than 12 foot studs above the 4 foot stem he would be cutting them anyway.
Question for LKM, Garvo etc.
