Don't over complicate it. Feed them the alfalfa and straw at the same time. They will eat the alfalfa first and don't give them any more alfalfa until they eat the amount of the straw you want them to. Selling good hay and buying poorer hay is a pain and lots of trucking. My cows eat lots of dairy quality hay and do just fine.
