The longer the cheese has been aged the sharper and drier it becomes. So look for cheese that has been aged longer. Check out some of the real deal cheeses made in Switzerland for comparison. They call one of their cheese Emmentaler and the name of the other common Swiss cheese is Gruyere. Jarlsberg cheese from Norway is a Swiss type cheese that is very good and not as expensive as the real Swiss cheeses and Costco has it for a good price.
