Sounds like they weren't in strong enough brine or soaked long enough. I'd resmoke one for giggles. Scalloped potatoes is always good. A potato ham soup is good, like a knoephla(sp) type thickness, ham and bean soup. Hindsight, be glad it's not too salty versus the other way around. My inlaws had some soaked for too long. They could NOT get the saltyness out. Even soaked in plain warm water. They couldn't eat it.
