I co-chair the pit beef stand at the National Apple Harvest Festival in Arendtsville PA.  It is the first two Saturdays and Sundays in October. We cook nearly 6.5 tons of bottom round flats for the two weekends.  In our case we start them on an open pit with charcoal and then transfer them to a pig cooker where they sort of steam in trays of water to soften the charring before getting sliced on industrial meat slicers.  Bottom round flats have minimal fat, although we trim much of it off so as not to catch fire on the pit.
