Agree with this. With a big, old buck, the only cuts I enjoy eating are the inside tender loins and the strip loins (backstraps). It's decent to pan fry those chops in flower, making it's own gravy. Or just grind it all. Your sausage should taste great. Does and fawns are the eaters.
