In my area all the salebarns have both night and day off cattle at their fat cattle sales. They sell in the order the cattle were received. When they get through the night cattle they announce it and prices adjust accordingly. Buyers know how much to adjust so I don't think it matters when you sell the result will be the same. Do whatever is more convenient for you.
