Trim the fell and fat from the outside of the leg, Leaving a little will provide moisture but too much and it'll be strong, most folks don't care for this taste.

drizzle of lemon juice first, but just lightly.
of course salt and pepper
roast uncovered at 325
Average size leg we do 2 1/2-3 hrs.

If outside of roast starts to be over browned I will cover or shield w al. foil

Makes great gravy and don't
forget mashed potatoes.

Some folks will serve with mint flavored jelly on the side

OPTIONAL:
rub with crushed garlic, about 2-3 clove
some folks sprinkle w thyme depending on your taste
AGREED with meat thermometer
