Maybe its just a Cannuck thing, but I think goose is very tasty. We just breast them out, pound the breasts flat with a meat tenderizer , dip them in bread crumbs and toss into the frying pan with a little bit of oil. Takes about 3 minutes to fry them up.. cook them until the blood starts to come through the breading then fly and repeat.. yummy stuff. My mom used to cook them similar to a turkey, it was tasty but much harder to avoid drying the meat out and turning it to shoe leather LOL.
