You would have to go quite a ways north to get a hold of spring wheat seed. It does not need cold to verbalize so it would go ahead and head out. Kind of doubt you could plant winter wheat now and get it to vernalize. If it didn't vernalize it would not joint and head out.
I don't know about your beardless wheat but considering it is a winter wheat, I would say it is going to do the same as winter wheat would.
Not sure what Triticale does in the spring.
I would say your best option is oats?
