A lot depends on what you are making with the potatoes. If you are baking them then you want a nice Russet potato like those commonly called Idaho or baking potatoes which have more starch in them. If you buy French fries at Micky D's or other fast food joints those potatoes will be made from Russets too. For soups, stews and other similar things then the red, white or yellow potatoes with a smooth skin work about equally well.
My guess is that in a blind taste test most folks could not tell the difference between a red, white or yellow spud.
