We had a few that a guy gave us this year. We canned them. Had the legs and thighs with them which I know are pretty tough. Boned out the thighs and breasts. Cut them into chunks, put them in a jar with a chicken boulon cube. Legs were put in whole. Put them in the pressure canner. Turned out real good.
