Back in the day, I used to fillet the breast meat off, cook separately. Then cut the leg/thigh apart, debone the thighs cook separately. Legs, I found best only be parboiled and meat picked off to be used in soup or casserole or....... Pheasant legs are tough and half bone/sinew.
