Preface - I am one rank amateur but I really like working with 3/4" birch veneer ply. I don't care much for the weight of melamine and similar products and I think you sacrifice a lot of strength too. Another downside is I think it's very hard on cutting edges. You can see sparks fly from compressed sawdust sometimes and finally, screws tear out of sawdust easily.
The birch veneer I get from Lowes is not really a cabinet grade due to less laminations or layers but it is very stable and quite suitable for what your doing. Edges can be sanded and painted without banding. Pocket screws and more conventional joinery are very compatible with plywood.
Even though it's double the price, it is worth it to me but that's only my opinion.
