The saturation of margarine depends on how much hydrogenation has been done. Margarine starts as an oil and is hydrogenated to make it more solid. The more hydrogenated it is, the more saturated fat it contains. Different brand have different amounts of saturated fat. Many of the name brands have more polyunsaturated fat than saturated fat as compared to the cheaper brands.
