Check out some annual conferences that provide info on such topics.  You can find a number of people at any of these events that can provide some answers.  

No-till On the Plains - Wichita, KS.  Annual conference upcoming Jan 29-30, with a "Beginners Soil Health Workshop" on the 28th http://notill.org/upcoming-events
Colorado Conservation Tillage Association (CCTA) - Burlington, CO.  Their annual conference is coming up on Feb. 5-6, 2019. http://www.highplainsnotill.com/index.html

Jacob Miller (Culbertson, NE) may be able provide you with some good information.  I have heard him speak a number of times, and he has some good experience to share, although he has committed to a cover crop and grazing system in SW Nebraska.

Good luck in your ventures.  No matter the route you take, your interest in Soil Health is a good start.
