Falling Numbers score is a measure of the amount of Alpha-Amylase activity in a kernel. Alpha-Amylase is an enzyme that helps begin the conversion of starch to sugar in the kernel. Alpha-Amylase activity ramps up as a precursor to sprouting. Generally the higher the number the better. The test is explained here. https://en.wikipedia.org/wiki/Falling_Number
