Nothing "bad" about the beef, just not as tasty in a burger.  Yes, obviously not the same beef and I never expected it to be. As a rookie I was just surprised at how different the beef was. Maybe if I didn't know it was old cow I would not have noticed such a difference!

My point being that after all the effort we put into raising beef, our families deserve the best we have, imho.  I like to eat beef, which is part of the reason I have cattle in the first place, might as well eat the best I produce and sell.
