I took a wild guess once what eliminating “illegal” labor i.e. increasing the cost of labor a few dollars an hour per employee would do and came up with an increased cost of a dollar or two per hundred weight of milk sold off the farm. There are about 12 gallons of milk per hundred weight. The lower cost of immigrant or illegal labor is but one factor in the success of big dairies. | |
