Sure you can, but if two bulls are scattering 32 cows out over 4 months I would bet dollars to doughnuts your success with AI will not meet your initial expectations.

Those numbers indicate you have an issue somewhere that needs figured out before spending a lot of money on AI'ing. Wrong genetics, nutrition issues, mineral deficiency, stress, something. If you have annual records, are your late calving cows the same each year? Same cow line? Same sire? I'd find a way to cull yourself into a tighter window that's more friendly to synchronization.
