The major companies have "promised" that they would not do that.

Like noted here, one farm doesn't mean much, many do. Ag data companies can figure out what products (theirs and others) work and don't, essentially getting free product development research. I think a lot of it is just coming back to finding more avenues to sell you something.

I always think about information asymmetries, where one person having knowledge that the other doesn't gives them an upper hand. Car buying is a great example: the salesman knows how much the dealer paid for they vehicle you're trying to buy and you know all the problems with your trade. Both sides are working what they know (and the other doesn't) to get the upper hand. Companies are doing the same, however you lose your hand when you give them that data, and in some cases they may know how much a particular farm made even before you do.
