No, it's for real. One locker around here used to stack them on flat racks during the rush of shotgun season. If December wasn't cold, a couple days into it, the pile would be steaming. That came to a stop after a warm December. An inspector probably helped with that decision.

I called in early November to schedule a beef at another locker, hoping it would be two to three weeks out before shotgun deer season started. First available date was in February. They're basically full of deer from November through January.

There's at least one locker not far away that processes only wild game. They only operate six months out of the year. http://www.ohrtssmokehouse.com/index.html
