Depends on the condition of the alfalfa, but corn will use the N, a decent top soil with a decent stand of alfalfa will have stored 100+ lbs of N for your corn to use around here. That dollars in the bank.

Around here one of the few ways to double crop is take a spring alfalfa cutting, and then plant beans. Depending what crops you need, and catch a rain just right that works well too.
