IDK.........How do you know a good knife before purchasing? I cant get a knife sharp worth a dang.... The chicagos we have seem to get little better edge than the rest but nothing I can feel is a good edge. All my worn out combine auger flighting cuts meat better than any of our household or butcher knives even after a good sharpening.I am beganing to think that the temper of the all the knife steel is crapy.I think my Barlow jack knife is a better steel than the Chicago and what ever else we have in the kitchen because I can get it to cut pretty good.
