| I' ve ground a LOT of deer. If I'm making burgers with venison, it gets mixed 50/50 with 77/23 or 80/20 ground beef. I want my burgers to actually taste good. 100% venison burgers are a waste of venison and a good appetite. They taste off, are too dry and stink when frying. Only 100% venison i do is jerky or chili meat.
If I had to pay a processor to do a deer, I'd give the deer away and take my c note and bring home a ribeye roll. | |
