West Central Wisconsin | I grind 100% venison but we do not use it to make burgers, only for chili. I tried making burgers once and experienced the same crumbling. I didn't care for the taste of straight venison either. A landlord of mine layers in a cake pan equal amounts of venison, beef and pork then scoops out enough to make pre-made patties between waxed paper. It was ok but I like my burgers to be beef! | |
