NC Kansas | Don't over think it. Dry rub, coat with butter/olive oil.. Smoke around 250 for 3-4 hours. Wrap or cover in foil and I finish mine in oven out of convenience. When I take out of oven I like to flip it breast side down in the drippings, cover back up and let cool down. I like to do all this the day before the meal, refrigerate the whole bird over night, carve it while cold, lay it out in a pan with a little chicken broth/pan drippings you saved, and heat it up in the oven for the meal.
