ecmn | There are either charts online or apps for a smartphone or tablet suggesting time + temperature. From my experience do not add fats to meats before cooking otherwise the flavor ends up in the leftover cooking liquid in the bag. I have cooked chicken, roasts, and pork shoulder from frozen. Works great for meat sales at the store bring it home season the meat to my liking vacuum seal and throw in the freezer. There is a great youtube channel "sous vide everything" that will give you the information you need. I have a Anova 900 watt cooker and like it because it can be set without a smartphone. |
