We used to buy boneless pork loins In the bag and trim and cut our own chops. Did that for years and they were almost always moist and tender. No more! The past few years they are bigger, but tough! Sometimes the only way to eat them is to slice thin, pound them out and make “tenderloins” out of them. Why is all supermarket pork tough?
