Pressure Canning Chicken

Subject: Pressure Canning Chicken


I'm trying to learn how to pressure can. My mom only water bath canned. Low-acid veggies like corn and beans she froze.

No matter which youtube video I watch, they all seem to be (at least) a little different from each other. I have the USDA guide to food preservation. The thing is, my local extension guide told me I HAD to cook chicken before I canned it. The USDA manual has guidelines for raw packing chicken.

The chicken is currently frozen. Can I just thaw it and pack it in jars to pressure can or must I cook it first?

Any advice, TIA.
