Its a convenience thing, just like anything else. In an afternoon, I canned 55 lbs of beef. A jar of that makes the best beef and noodles, chili, or stew there is. I've never lost a jar and the last batch I made was still good 2 years later. Also, a jar never goes bad when your freezer dies and you find out when you discover the source of 'that smell".
