Subject: 35-40 lbs turkey


Southern Ontario
F-I-L grows turkeys as a hobby.
Realitives coming up from Massachusetts tomorrow for a big family supper.
F-I-L pulls 40# turkey from freezer yesterday and asks wife and I to "take care of it".
He is proud to grow birds as big as he can......I think he had grown one around 50# once....it had to be cut in two to cook.
We brined the beast today/tonight and it is still brining in the farm's walk in cooler.
We tested it and with minor modifications to oven, it will just fit in.
How long and what temp do we cook this Goliath?
Any tips? Aluminum foil? Basting? Rub with butter before cooking?
We are not putting stuffing in the bird.
Any suggestions are welcome!
Deep frying is not an option as we do not have a pot that big.
We realize this is a good problem to have...hahaha...just asking for friendly, advice here to make a nice meal.
