Boiled peanuts

Subject: Boiled peanuts



East Central Arkansas

I had to cut a water furrow across the two rows of peanuts I have planted in the garden because of the four inches of rain we have had since yesterday so a pulled a few vines up where I was digging. Vines seemed to be loading up good a had a fair number of green immature peanuts on them. I brought them to the house washed good and put in pot of water with salt, hot pepper and some garlic. Pretty good eating after a little over one hour of boiling. Looking at recipes they say to soak three times for like a hour and to boil for three hours. Why the soaking? Would that be for more mature nuts? Three hours seems like a long time boiling. I remember when we were at the Sunbelt farm show down in Georgia they were cooking them at one of the exhibits and had just put them on to boil and saying it would be a good while before they would be ready. I hope they don't give me the scours.
