Home food preservation has always interested me and would like to know more about it. It seems to be a lost art. We rely too much on the freezer. My wife does make jellies and jams and we pickle asparagus, cauliflower, beets and cukes. I really like canning venison but she's not fond of the mess. I had a jar of canned elk a couple weeks ago that had got misplaced and forgotten. It would have been from 2004 when we took the girls out to CO. It tasted fine and I'm still kicking! Keep posting, I enjoy and am envious of your garden and skills! Joe

Edit to add; Have you ever considered a summer kitchen? There are still a few older farmsteads around here where you will see what was once used as a summer kitchen.
