Save those purple hull pea hulls and make jelly! It's surprisingly good. Boil the hulls in a little water to make a stock, then use 5 cups of stock, 1 package of sure jell and 4 cups of sugar. The key is to get the stock concentrated. Jelly from cream pea hulls is my favorite.
