In Vermont, most farming acreage is in the the Champlain Valley or up closer to the Canadian border. The vast majority of farm land is in forages for dairy cows.

Lots of ski areas along the central spine of the Green Mountains in VT, with many of them offering chairlift rides to the summit at least on weekends. If you like beer there are an unbelievable number of craft breweries, especially along the corridor between Burlington and Montpelier, and beer tourism is getting very popular. If you're coming from the Adirondacks, take the Lake Champlain ferry from Plattsburgh NY - Grand Isle VT, or from Port Kent NY - Burlington, VT. The former is a commuter ferry, the latter a tourist ferry over the widest part of the lake. The drive from Lake Placid, NY down to Lake Champlain is a good one with lots of elevation drop and good views.

Other people mentioned the museums and are good choices. Don't forget to stop in for coffee and gas at the locally owned general stores that most rural towns still have.
