No, don't grill it until you get the shin off. The one I did with the skin on , was hard to peel. I think the proper way is to boil the tounge first and remove the skin. I just put mine on the grill (frozen) because I thought since it was 10 years old it was only going to be dog food......I was wrong LOL. as for the ox tail soup......my mom used to make that and it was great. Most people now-a-days don't even know what it is.
