I like ham. Most of the time ham is dry and tough. But the last one we had, from the same store, same size, etc. the ham was the best. Not dry, fell apart, just exceptional. So, what is the deal. Was the good one just a younger pig than most?

Are there secrets to cooking hams so they are more consistently good? I know some of you farm boys and girls can cook. Give up your secrets.
