NW IA | Mrs Curious here. Mr. Curious said that you are looking for easy breakfast casserole recipes. This is my "go to" recipe. My family loves it and it's easy.
In a greased 9x13 pan, put 1 bag of tator tots (1/2 thawed)
Brown and drain 1 pound of sausage ( I like to use the bacon flavored sausage). Put over the potatoes.
Mix:12 eggs, 1/2 c. milk, a squeeze of prepared mustard, diced onions to taste, 1 c. shredded cheddar cheese. Pour over the ingredients in the pan.
Bake uncovered at 350 degrees for 1 hour.
You could add chopped green peppers and ham for something different.
(I usually make it and bake it right away but I see no reason why you couldn't make it the night before and bake in the morning. Maybe bake a bit longer since everything will be cold.) | |
