Zones by pure soil types or organic matter IMO is a recipe for disaster. Of course our soil type maps up here are crap compared to your most likely but they don't tell the whole story. Organic matter is also not all of it either. A typical approach atleast up north here is taking satellite imagery (multi years or the one right image) for making base zones, adding other data if you have it like yield and elevation and creating a base map. From there soil test by the zones and find out what you need and what is going on. Feel free to shoot me a message and I'd be happy to guide you in a few different software options and groups that could help.
