I can speak on the ethnic questions, figure out Hispanic holidays and have them on hand. Several years ago a buddy and I did this religiously. Go buy a trailer load the Friday before the holiday and profit $75 per head in less than 7 days. We’re talking 100+ animals, we just about stacked them on top of each other in the trailer. Issue for us was they wanted to kill on site, that went great for a couple of years then one bad apple spoiled it. Buddy’s dad said if they can’t do it humanely then you boys are done. And that was the end of that. We raised boer goats for a while, 50 or so nannies and it was difficult to keep the anemia in check, let alone the coyotes and having horns get hung in woven wire fences. I have been told that there is a pretty good market over at Exeter if that’s not to far from you. Hope this helps a little.
