Put your cast iron skillet in the oven and turn it up as high as it will go. Rub some canola oil on the steak and salt and pepper.
Turn the burner on high on your range.

When the skillet is hotter than the gates of hades take it out and put it on the burner and throw the steak in it.
30 seconds later flip the steak over.
After another 30 seconds take the skillet steak and all and put it in the oven for two minutes.
After two minutes turn the steak over and leave it in the oven another two minutes.
Take the skillet out of the oven. Transfer the steak to a plate and let it rest for a few minutes.

If you don't have a cast iron skillet, shame on you.



Doing all that indoors? Wouldn’t that smoke quite a bit?
